Further aged in bottles and kegs for 7 months before release. Major differences in production of Spontaneously Fermented beers vs. typical beer production: Turbid mash - Raw grains and high mash temps intentionally create an *unfermentable* wort which favors slower fermentation drawn out over years rather than weeks. Aged hops - We age whole leaf hops (not pellets) for several years in burlap coffee sacks.
